Boil milk, and when lukewarm add 2 spoons active culture from yogurt or buttermilk.
Let sit undisturbed & towel wrapped for 8 hours or so.
Churn for a while
Add water (no more than equal portion) & churn until butter clumps
Spoon out butter & squeeze liquid out
Ginger (juice or 1/2 spoon powder)
Cilantro – 1 handful chopped fine
Pinch of Hingu
Shake with buttermilk
Drink after meals – provokes digestion
Cooling- reduces Pitta
Increases Kapha- use in small quantities
Best season is summer, and at noon
Evenings- neither great nor terrible
